The Story

Olivier is now at the helm, of this small, family-owned estate, alongside brother Guy. They own 13 hectares spread over Beines, La Chapelle Vaupelteigne, Lignorelles and Villy. What sets them apart is their upmost respect for their grapes and the terroir. The average age of vines for the basic cuvée is twenty-five years and yields are kept purposely low to increase quality. They use a gentle pneumatic press and practise static settling to eliminate course particles. The wine is fermented in enamelled stainless-steel vats, then aged in oak for 10 months before bottling. This is exemplary Chablis; pure, sleek and sensibly priced.
